Phil’s Tomato Bisque


Ingredients


  • 2 Tbsp. Butter
  • 1 Yellow Onion
  • 3 Celery Stocks
  • 2 - 28oz cans Whole Peeled San Marzano Tomatoes
  • 2 Beef Bouillon Cubes
  • 1 Tbsp. white sugar
  • t tsp. salt
  • ¼ tsp dried basil
  • ¼ tsp black pepper
  • 1 Turkish Bay Leaf
  • 8oz - 16oz Heavy Whipping Cream, to taste


Directions

  1. Dice the Yellow Onion and Celery Stocks
  2. Melt butter in a 4qt pot over medium high heat.
  3. Add onion and celery to the pot and cook until translucent
  4. Add both cans of San Marzano Tomatoes to the pot.
  5. Add beef bouillon cubes, white sugar,  salt,  pepper, and basil.
  6. Using an immersion blender, blend everything in the pot until smooth
  7. Once the tomato mixture is smooth add the Turkish Bay Leaf.
  8. Reduce temperature to medium low and simmer for 30-45 minutes.
  9. Remove the bay leaf
  10. Just before serving, add the Heavy Whipping Cream.
